Spicy Turkey Chili

Lean turkey lacks the fat and richness beef brings, so you build it back with aromatics, spice, and umami. Big batch, freezes and reheats great.

Ingredients

5servings
  • 1 lb 93/7 ground turkey (not 99/1, it dries out)

  • 1 onion, diced

  • 4 cloves garlic

  • 1 bell pepper

  • 1 jalapeño, diced

  • 1 can diced tomatoes

  • 3 tbsp tomato paste

  • 1–2 cups broth (chicken or beef), which sets the consistency, so go by preference: closer to 1 cup for a thick chili, 2 for looser. ~1.5 is a good middle

  • 2 cans beans, drained: 1 kidney + 1 black

Umami boosters

  • Worcestershire (preferred): ~2 tsp, or soy sauce. This is the only either/or: pick one, not both

  • Small amount of brown sugar to balance the acidity from the tomatoes and paste

  • Optional: 1 tsp cocoa powder or a small square of dark chocolate, which adds faint bitterness and depth, not chocolate flavor

Spice base (for 1 lb turkey, scale up proportionally for more)

  • Spice mix: chili powder 1 tbsp, cumin 2 tsp, smoked paprika 1 tsp, garlic powder 1 tsp, onion powder 1 tsp, oregano 1 tsp, salt ~1 tsp (to taste), black pepper 1/2 tsp, cayenne 1/2 tsp

Steps

Prep (~10 min)

  1. Dice the onion, bell pepper, and jalapeño. Mince the garlic.

  2. Mix the spice base in a bowl, then split it roughly in half: one half for browning the turkey, one half for the pot.

  3. Drain the beans.

  4. Measure out the tomato paste, broth, and umami boosters (Worcestershire or soy sauce, brown sugar, optional cocoa) so they're ready to add in sequence.

Cook (~40 min)

  1. Brown the turkey hard. Season it as it cooks with about half the spice base. This is where flavor develops with lean meat.

  2. Cook down the onion, garlic, bell pepper, and jalapeño until soft.

  3. Stir in the tomato paste and let it cook a minute (concentrates umami).

  4. Add the tomatoes, broth, beans, the remaining half of the spices, and the umami boosters.

  5. Simmer 30–45 min minimum. Lean turkey needs time and layered seasoning to get rich. Rushed = flat. Taste near the end and adjust salt and heat.

Notes

Make or break

  • Split the spices. Half on the meat while browning, half into the pot. Layering beats dumping it all in at once

  • Smoked paprika replaces the smokiness fatty beef would give

  • Tomato paste does heavy umami lifting. Don't skip it

  • Simmer long enough. The single biggest factor for lean-meat chili

  • Go easy on cayenne up front. Heat builds as it simmers and compounds with jalapeño and spicy broth

Tips

  • For extra spicy: use spicy beef broth, 1.5 jalapeños, and 1 tsp cayenne. These three stack, so add ~3/4 tsp cayenne up front, simmer, then taste before adding the rest. You can't pull heat back out. Dairy toppings (cottage cheese, Greek yogurt) cut the heat if it overshoots.

  • For more volume: a third can of beans (pinto) stretches the batch and adds carbs and protein. It does shift the ratio carb-forward, so bump to 1.5–2 lb turkey if you want to keep protein-per-serving high.

Levers

  • Toppings

Cheddar (measured, 1/8 cup), a creamy topping, scallions, cilantro, jalapeño, squeeze of lime, saltines.

Creamy topping options, per 1/8 cup (2 tbsp):

    OptionCaloriesFatProtein
    Nonfat Greek yogurt~170g3g
    Blended 2% cottage cheese~250.5g3.5g
    Cottage cheese blend (recipe below)~281.5g2.5g
    Sour cream~606g1g

Sour cream is the outlier: it costs 4–6x the fat of any other option and gives back almost no protein. Greek yogurt is the leanest but its tang is sharper. Blended 2% cottage cheese is the best all-around swap. It's creamy and pourable like sour cream, mild enough not to fight the spice, and adds real protein.

The blend (recommended): 1/2 cup cottage cheese : 2 tbsp sour cream : 2 tbsp milk. The sour cream is ~1/4 the cottage cheese by volume; the milk loosens it enough to blend smooth. Yields ~3/4 cup, enough for 5 bowls. Whole blend: ~170 cal, 9g fat, 14g protein.

Stir it into the hot bowl rather than dolloping cold on top. The heat carries it through the whole bowl.

Cheddar note: 1/8 cup (~0.5 oz) runs ~55 cal and 4.5g fat. This is where to spend fat if anywhere. It carries the flavor. Measure it rather than free-pouring; a heavy hand doubles it fast. 4 saltines add ~50 cal and 9g carbs.

The base is lean enough that toppings become the dominant fat source, which is why the creamy-topping choice matters more here than it looks.
