Turkey Taco Grillers

The single swap of 80/20 beef for lean turkey (or 90/10 beef) roughly halves the fat. The spices carry tacos, not the fat, so season aggressively. Servings are for the filling only.

Ingredients

4servings
  • 1 lb lean ground turkey (93/7), or 90/10 ground beef

  • 2 cloves garlic, minced

  • 1 can black beans, drained, for extra protein and fiber

  • Splash of broth or water to simmer the seasoning in

  • 8-inch tortillas (2 per serving, 8 total for the batch), or bowl base (rice)

Seasoning (or a low-sodium taco packet)

  • Spice mix: chili powder 1 tbsp, cumin 2 tsp, smoked paprika 1 tsp, garlic powder 1 tsp, onion powder 1 tsp, oregano 1 tsp, salt ~1 tsp (to taste), black pepper 1/2 tsp, cayenne 1/2 tsp (optional, or 1 tsp for spicy)

Steps

Prep (~15 min)

  1. Dice the red onion and mince the jalapeño for the pico; mince the garlic for the filling.

  2. Quarter the cherry tomatoes, juice the lime, chop the cilantro.

  3. Char the corn in a dry hot pan (or grill it). Do this now since the pico needs time to sit.

  4. Measure out the filling spice mix.

  5. Drain the black beans.

Cook (~25 min)

  1. Make the pico first so it has time to sit: toss the charred corn, red onion, jalapeño, tomatoes, lime juice, and cilantro together, season with salt. Let it sit at least 10 min while you cook the filling.

  2. Brown the meat hard in a pan, breaking it up, seasoning as it cooks with about half the spices.

  3. Add the remaining spices, the garlic, and a splash of broth/water, simmer a few minutes so the seasoning soaks in and the garlic mellows (dry lean meat needs this).

  4. Stir in the beans to heat through.

  5. Build the grillers: fill the tortillas, pull a small handful of cheese for the outside and sprinkle it on just before you flip, then griddle in a hot dry pan until crisp and golden on both sides. (Or build rice bowls instead, no griddling needed.)

Notes

Make or break

  • Season aggressively — the fat isn't what made beef tacos good, the spices were

  • Simmer with a little liquid so lean meat doesn't go dry

  • Smoked paprika again covers the smoky depth beef fat provided

  • Beans stretch the batch and boost protein/fiber

  • Take the outside cheese from the same 1/4 cup, not extra. Pull a small handful for the exterior crust and use what's left inside. Total cheese stays at 1/4 cup either way

Tips

  • Turkey or beef? 93/7 turkey is the default here: cheaper and easier to find than 93/7 beef, with nearly identical macros. 90/10 beef is the easy-to-find fallback if you'd rather use beef; it adds ~30 cal and ~3g fat per serving. Meat comparison is at the bottom.

Levers

  • Spicy Charred Corn Pico

The default topping, dressing everything below. Charred corn salsa with crunch, freshness, and heat for almost no fat.

    • 1.5 cups corn (charred in a dry hot pan or grilled, off the cob or thawed frozen)
    • 1/2 red onion, finely diced
    • 1 jalapeño (or serrano for more heat), minced
    • 1 cup cherry tomatoes, quartered
    • Juice of 1 lime
    • Handful cilantro, chopped
    • Salt to taste

Char the corn first. It's what gives the pico its depth. Toss everything together and let it sit 10 min. Makes ~3.5 cups; whole batch ~330 cal, 58g carbs, 3g fat, 9g protein. A griller serving uses 1/2 cup (1/4 cup per tortilla), a rice bowl uses 3/4 cup. Either way, expect to have some left over.

  • Toppings & build options

The default toppings: 1/8 cup cottage cheese blend (the sour-cream swap) across every build. The griller uses 1/4 cup cheddar total and 1/2 cup pico split across both tortillas; the rice bowl uses 1/8 cup cheddar and 3/4 cup pico on top.

Griller: two 8-inch tortillas, filled, with 1/4 cup cheddar total split between them. Pull a small handful out for the outside and sprinkle it on just before you flip so it griddles onto the pan and crisps into a golden crust, the rest goes inside when you build it. A hot dry nonstick or cast iron crisps the tortilla in its own starch (the exterior cheese greases the pan for you), or use a little butter for a richer, more traditional finish. Top with 1/4 cup corn pico per tortilla (1/2 cup total). A full batch of pico makes more than this, so expect to have about a third of it left over for something else.

Rice bowl: skip the tortilla entirely: filling over 3/4 cup rice with toppings, the leanest build since the tortilla is the hidden fat. All rice measures are cooked (1 cup cooked ≈ 1/3 cup dry).

Brown vs white rice: macros are nearly identical (brown adds ~5 cal, 0.5g protein, 1g fat per 3/4 cup), but brown carries ~5x the fiber and digests slower for a flatter blood sugar curve. Brown is the better default; white is preferable right after training, when faster digestion helps refill glycogen. Brown takes about twice as long to cook.

  • Meat options (filling only, per serving)

    MeatCaloriesCarbsFatProteinRatio C/F/P
    93/7 turkey (default)~26520g7g31g29 / 25 / 46
    93/7 beef~29019g8g35g26 / 26 / 48
    90/10 beef~31519g11g35g24 / 32 / 44

93/7 turkey is the default: cheaper and easier to find than 93/7 beef, with nearly identical macros. 93/7 beef edges it out slightly on protein if you can find it. 90/10 beef is the easiest to find of the three and only adds ~30 cal / 3g fat per serving.
